Ema Datshi (ཨེ་མ་དར་སྲི) is Bhutan's iconic national dish – chilies (ema) cooked with cheese (datshi) until gloriously melted and slightly soupy.

1. Phaksha Paa (པུག་ོས་པཔད)

Pork strips stir-fried with red chilies and Sichuan pepper. Rich, fatty, and intensely flavorful.

2. Shakam Ema Datshi

Ema Datshi made with dried beef (shakam). The smoky meat adds incredible depth to the cheese and chili base.

3. Kewa Datshi

Potatoes (kewa) with cheese and chilies. Slightly milder than ema datshi, perfect for spice-cautious visitors.

4. Jasha Maru

Bhutanese chicken curry with tomatoes, ginger, and (of course) chilies. More approachable for newcomers.

5. Momos

Dumplings filled with pork, beef, or vegetables. Steamed or fried, served with spicy dipping sauce. The Bhutanese version is less oily than Tibetan/Nepali momos.

6. Hoentay

Buckwheat dumplings unique to Haa Valley, filled with turnip leaves. A specialty worth seeking out.

7. Red Rice (Eua)

Bhutan's signature short-grain red rice with a nutty flavor and slightly sticky texture. Served with every meal.

Surviving the Spice

Not everyone can handle Bhutanese heat levels. Here's how to cope:

1. Don't Touch Your Eyes

Capsaicin from chilies lingers on fingers. Wash hands before touching your face!

2. Dairy Helps, Water Doesn't

Milk, yogurt, and cheese reduce burning. Water spreads the capsaicin around.

3. Rice is Your Friend

The starch in red rice absorbs and dilutes spice.

4. Know Your Limits

It's okay to ask for milder versions. Bhutanese people understand not everyone grew up eating chilies!

5. Carry Antacids

Just in case. Your stomach may need time to adjust.
